Just a quiet evening writing this post tonight…here’s my view…

Sitting on the couch, with a cup of tea, candle lit, tv in the background, hubby at hockey and kids are in bed.  Now this is how I like to write my “What I Ate Wednesday” posts.  Can I get an “ahhhhhh” 😉 I even vacuumed and mopped after dinner, so heck, I can enjoy a clean floor to boot, even if it only lasts a nano-second.  The simple pleasures, right?!

This week, I’ve been trying to clean up my eating a little. My stomach has been bothering me a bit the last couple weeks. Not sure if its a touch of a bug or what. But I have been eating quite a bit more carbs than usual, so perhaps they’ve been bloating me.  I’m just trying to go a touch more simple, and for breakfast having oatmeal more often vs. gluten free bread and waffles.

Having said that…lets move onto breakfast.

Breakfast

I made a serving of Coach’s Oats (1/3 cup raw mixed with 1 cup water). Had to use this massive bowl or get a big time overflow in the microwave (pet peeve!). Topped it with powdered stevia (NuNaturals), bit of almond milk and a chopped up strawberry.  Couldn’t forget the protein, so I also had 1 egg mixed with 4 egg whites, scrambled with a bit of ketchup on top. Trader Joe’s Organic Ketchup is my fave. Love the spices in it.

Snack

As per usual, dropped off my 5 year old at school with the 1 year old in tow, and headed to the gym after. Dropped her off in the childminding and went in to battle an intense biceps/triceps workout. I’m now on Week 5 of BBH Body Assault. I must say, these workouts are very tough. My body is feeling pretty beat up. But its great as I haven’t been sore like this in forever, but mixing it up is great and is certainly keeping my body guessing!

So nevertheless, I was happy to be home after and munching on this homemade protein bar

They’re my usual No-Bake “Better Than Store Bought” Protein Bars, and yes, I’m still addicted to swapping out the vanilla whey protein for chocolate and using dried cherries instead of raisins. I’ve been getting dried cherries in a bag from Costco, and naturally, I am in love with them. I don’t have dried fruit aside from post-workout (with the sugar and all), but after a good workout, its a great way to fuel up!

Lunch

2 hour later and I was ready for lunch. Looked to see what was in the fridge. Settled on some leftovers we had on hand.

Had the last of some healthy chicken strips (recipe here) from earlier in the week, and also some Homemade Vietnamese Pho Noodle Soup that I made for dinner last night. Lots of veggies and used tofu shiritaki noodles, so the carbs are pretty low!

Snack #2

I’m thinking the soup must not have done it, cause I was hungry again shortly after. So I knew I’d need a filling snack if I had a hope in heck of making it to dinner without stealing random snacks from the cupboard before dinner. I’m notorious for grabbing handfuls of cereal, granola, coconut chips and a couple squares of chocolate throughout the day, usually in the late afternoon. Another reason why I like to eat more frequent meals, as I tend to be a snacker if my hunger isn’t in check.

I decided on a protein shake (1 scoop whey protein, half a frozen banana, 1 Tbsp natural peanut butter, ice and almond milk). I blended it with my Blendtec to get a milkshake type consistency.

I also had some Peanut Butter Puffins cereal on the side (I actually had more than shown here, and my hand was in the box before I actually poured out a serving! 😉 )

Dinner

I felt like doing Mexican tonight since we haven’t had it for a while. Thawed out some lean ground turkey in the morning. Sauteed the ground turkey with onion and a salt-free taco seasoning (from Epicure). Hubby pitched in and made a fantastic homemade guacamole from avocado, onion, tomato, cilantro, garlic, greek yogurt and lime juice.

For the other fixings we had corn-only tortillas, shredded cheddar, lettuce and salsa.

I ate two, but then had a third serving of everything aside from another corn tortilla. It was perfecto. I love how quick and easy tacos are to make.

Before Bed Snack

Well its now about 9:30pm so its most definitely snack time. The other night I strayed from my greek yogurt to have a protein lava brownie, which was a great change, but I’m back on the yogurt tonight.

About 3/4 cup non-fat greek yogurt with vanilla stevia drops (NuNaturals), coconut chips (Rockwell’s) and Nature’s Path Vanilla Almond Granola.

Probably have about 30 more minutes of tv in me, then off to bed. Night all!

p.s. See you tomorrow with the Peanut Butter Chocolate Cheesecake Protein Bars! (phew, long title!)
