What I Ate Wednesday #5

Yet another Wednesday!  This one being a bit different than usual, since its the first day that I will be solo-parenting for the next 10 days.  My hubby left for his annual hunting trip, so I will be the parent, taxi, nanny, nurse and mommy all by myself.  Don’t get me wrong, I definitely count my blessings that I get to work-from-home and be with the girls. I know many people have more demanding schedules that I do, so I am very glad I get this time with them.  Being a solo parent is nothing I’m not used to, as his job requires some traveling. Nevertheless, I definitely feel for single moms when these weeks arise. You get all my admiration and respect!

Breakfast

We all had protein pancakes this morning. I was too lazy to haul out my big blender, so I did 3 separate servings in my magic bullet (1 pancake each for myself and hubby before he left, and the kids split 1 pancake). Just follow the single serving recipe in this post if you’d like to try them!

Sometimes I do sugar-free syrup, but today, I felt like having some real maple syrup….so I did! 1 pancake has 6 egg whites, so its a good hefty dose of protein!

Snack

After school drop-off, I headed to the gym with the wee one for a leg workout. Came home and pulled a protein bar out of the freezer. Sad its the last of the Pumpkin Spice Protein Bars. Will have to make another batch soon!

Lunch was a bit of a mish-mash today. Had some leftover turkey spaghetti sauce I made from last night. To make it, I just cooked up some ground turkey with onions, shredded carrot and a boatload of fresh spinach for extra nutrition. Cooked that down a bit, then added 2 jars of pasta sauce, some extra spices, and a few packets of stevia to sweeten it up a bit more.

I also had some leftover roasted broccoli and of course gluten-free penne. So I put together 1/2 cup cooked noodles, plus the rest of the broccoli (about 1/2 cup) and a cup of the turkey meat sauce. Nuked it all and sprinkled a little parm on top.

Once the little one went down for a nap, I started work on a new recipe. Copycat Reese’s Peanut Butter Cups, but a Sugar-Free version! 2 failed attempts, and I got the 3rd right. Of course I had to taste test…so I ate one. Really good! Will be posting the recipe pretty quick!

Dinner

We usually have a pretty early dinner at 5:30, as the kids turn into hungry beasts. My meals when my hubby are gone are pretty simple.

I made the kids chicken strips and peas, and I had some leftover Pumpkin Soup (recipe coming soon), and some leftover rotisserie chicken – dark meat!

I’m feeling pretty full. To be honest, those Peanut Butter Cups are darn filling! So not sure if I’ll have a snack later.  I may just have some tea and call it a night! But if the hunger hits, I’ll probably just have a bit of greek yogurt and stevia. I’m loving this lemon stevia lately. Makes yogurt taste like lemon meringue pie!
