If you haven’t gotten on board with making your own granola yet, I highly recommend it. Not only for the taste, but for the huge cost savings. To buy an average bag of natural granola, the cost ranges from $6.00-$9.00 and there isn’t all that much in the bag. Since I’ve discovered making granola on the stovetop, I’ve started making it very frequently.
You may have already tried my other skillet granola recipes, the Gingerbread Granola & the Pumpkin Spice Granola. Since peanut butter and chocolate is one of my all-time favorite combos, I knew I had to make it into a granola.
Let me tell you, this sweet snack will fix your sweet tooth. I put some non-fat greek yogurt on the bottom (sweetened it with some NuNaturals vanilla stevia drops), then topped with the peanut butter & chocolate granola and a little dollop of TruWhip which is my new favorite whipped topping made with more natural ingredients than other versions. To.Die.For. Seriously. This snack was so good. I decided to use Green & Black’s Milk Chocolate as its such a delicious and high quality chocolate. If you haven’t tried their bars yet, you’re missing out!
Ok, back to the granola! Peanut butter and chocolate fans…you must try it, you won’t be sorry! It makes 4 cups in a batch so its quite a bit, and remember the cost savings is huge compared to store bought. Not to mention crazy delicious. Hope you give it a try soon!
- 2 cups old fashioned oats
- ¼ tsp salt
- ⅓ cup roasted salted peanuts, chopped
- ¼ cup + 1 Tbsp honey
- ¼ cup natural peanut butter
- 2 tsp vanilla
- 1 Tbsp coconut oil, melted (or another healthy oil)
- ¼ cup (50 g) chocolate chunks, chopped (I used Green & Black's Milk Chocolate)
- In a large bowl, mix together all the dry ingredients (oats, salt, peanuts).
- In a smaller bowl, whisk together all the wet ingredients (honey, peanut butter, vanilla, melted coconut oil).
- Mix the wet ingredients into the oat mixture and stir until evenly coated.
- Meanwhile, warm up the largest skillet you have on the stove over medium heat. You need a big skillet as you want the granola spread out nicely in a single layer.
- Set a timer for 15 minutes. Place the granola in the skillet and allow to cook, turning frequently with a spatula every 15-20 seconds. Don't leave it unattended or it may burn.
- After about 10 minutes it will begin to brown. Cook another 3-5 minutes until golden all over. Remove from heat, spread granola on a baking sheet. I like to line it with parchment paper or non-stick foil.
- Once mixture is almost cool, mix in the chocolate chunks or chocolate chips. Once completely cool, store in a container and keep at room temp.
