I’m sure you’ve probably heard by now that chia seeds are considered a super food. Why? Well a lot of reasons actually. Firstly, its super high in fiber, and has this gelatin like quality that makes the seeds expand, and can help to keep your intestines clear. Secondly, its very high in omega 3. Thirdly, its a great sort of vegetarian protein! These are just a few reasons on why they’re so great to eat.

Personally, I love the taste of the little seeds, and like how they thicken up in a short amount of time. Chia when mixed with just about anything with thicken it up, so why not make it into a pudding?! I’m definitely not re-inventing the wheel here, this is something you may already be doing.

Its hard to even call it a recipe, as its just a few ingredients. But its a great base, and really, you can use whatever flavors or add ins you want to. My 1 -year old loved this lemon flavor, and she ate about 3/4 of the test recipe!

I chose to keep it dairy free by using almond milk and not adding yogurt, but greek yogurt would be a delicious addition as well. The possibilities really are endless. Would love to hear your favorite flavor combos and add-ins!

Ingredients
  • 2 Tbsp chia seeds
  • ¾ cup unsweetened almond milk (or milk of choice)
  • 5 drops lemon stevia (I used NuNaturals) or 1 Tbsp lemon juice & 1 packet stevia
Instructions
  1. In a bowl, mix together chia seeds with almond milk and whisk or mix well with a fork.
  2. Put in the fridge for at least an hour, until pudding has a chance to set.
  3. Once mixture has turned into a pudding-type consistency, stir in stevia, or lemon juice and stevia packet.
Notes
If you want a really thick pudding consistency, use ½ cup milk instead of ¾ cup.
