Great to have with eggs, veggies, a mexican meal, etc! Excellent with crackers or baked chips for holiday entertaining too.
Makes 16 servings
2 avocados
1 small onion, finely chopped
1-2 clove garlic, minced
1 ripe tomato, chopped
1 lime, juiced
2 Tbsp cilantro, chopped
salt and pepper to taste
Peel and mash avocados in a medium bowl. Stir in onion, garlic, tomato, lime juice, salt and pepper, cilantro. Season with remaining lime juice and salt and pepper to taste.
