This combo of tart apples, sweet dates & pecans is sure to please! Great pot-luck item!
Makes 10 (1/2 cup servings)
2 cups uncooked whole grain quinoa
2 granny smith apples, chopped
1/2 c pecan halves, quick roasted
1/2 c dates, chopped
1/2 c green onion, chopped
2 Tbsp grainy mustard
1/2 c white wine vinegar
1/4 c olive oil
2 Tbsp coconut palm sugar (or sucanat or another raw brown sugar)
Cook quinoa. Rinse grain first, then cook in 4 cups boiling water. Once finished and water is absorbed, place into bowl to cool. Mix dressing and add to quinoa. If making ahead of time, place in fridge with dressing only. Before serving, add apple, dates & roasted pecans. (Dry roast pecans on stove for 3-4 minutes) Serve!
