I admit it! I love anything with pineapple! This is a very yummy crock pot meal that the whole family will love! Not to mention easy! Throw it all in the crock pot in the morning, come home, and dinner is on the table! I served it with some raw sliced red pepper on top, would have been even better if it was chopped green onion (didn’t have any on hand). I love a crunchy topper with most crock pot meals.
Crock Pot Pineapple & White Bean Chicken
Makes 6 servings
4 x 4 oz chicken breasts, raw, cut into large pieces
1 onion, chopped
1 14oz can white kidney beans (also called cannellini beans), rinsed and drained
1 14 oz can no-salt added tomato sauce
1 14 oz can pineapple tidbits, drained
2 Tbsp dijon mustard
3 garlic cloves, chopped
1 tsp ginger root, grated or chopped
Combine all sauce ingredients in slow cooker. Place in chicken, beans & pineapple. Stir until blended. Cook for 3-4 hours on High, 5-6 hours on Low.
