End of the Almond Butter Jar Oats

Don’t you hate when you get to the end of your Almond Butter (or Peanut Butter) jar and all that’s left is that hard paste that’s impossible to spread?  Even melting it down doesn’t make it soft and spreadable.  What do you do?  That’s easy!  Make Overnight Oats!  In this batch, I had about 2 Tbsp left of Almond Butter in the bottom.  The following recipe will make 2 servings.

End of the Almond Butter Jar Oats

Makes 2 servings

2 Tbsp natural almond butter (remaining in jar)
1 cup old fashioned oats
1 cup unsweetened almond milk
1/2 ripe mashed banana
1/2 tsp cinnamon
12 drops liquid stevia (or 2 packets)
1/4 cup water

Combine all ingredients into almond butter (or peanut butter jar). Shake well and place in the fridge to sit overnight. Even a couple hours is sufficient.  Just enough to soften the oats and the flavors to combine together.
