Wow, its already Wednesday! I love how the week after the long weekend goes so quickly!
I’m super excited about today’s “Favorite Find”, especially if you like healthy shortcuts!
If you don’t remember, back in April, I was at a health food expo. I came across this booth, Namaste Foods. They were sampling some muffins made with their product. Gluten free is obviously a very popular thing right now, but to be honest, many of the mixes I’ve tried are not-so-good. Very gritty in texture and quite bitter. Another bogus about pre-made mixes is all the sugar in them (and you know I like to keep things low sugar!) After the show, they were in touch with me, as I was interested in trying some of the sugar-free products! So they sent me a bag of their No Sugar Added Muffin Mix!
Ingredients: Sweet brown rice flour, brown rice flour, tapioca flour, arrowroot flour, rice milk powder, cream of tartar, baking soda, salt, xanthan gum, and ground vanilla bean.
Contains No: Gluten, sugar, wheat, soy corn, potato, peanut, tree nuts, dairy and casein.
Here’s the Nutrition (basically per muffin) of the mix only.
Directions on Bag:
What You Need: 2 eggs, 1/2 cup oil, 1 cup water.
- 1. Prep: Heat oven to 400 degrees F. Lightly spray or grease pans (or paper liners).
- 2. Mix: Combine 2 eggs, 1/2 cup oil, and 1 cup water. Add to muffin mix and blend.
- 3. Bake: Bake for approximately 10-15
What I Used:
4 egg whites (carton), 1/2 cup unsweetened applesauce, 1/3 cup Krisda stevia baking formula, 1 cup unsweetened almond breeze, 1 cup fresh blueberries. I felt it needed the stevia for sweetness. If you don’t have a stevia baking formula, you could use about 12 packets of stevia. I did the same baking directions as above.
I made them along with some other muffins. You can see they are the Blueberry Muffins in the back row. I served them when family came over for brunch, and honestly, there were a hit with EVERYONE! Even the people that aren’t gluten free!
So I would totally recommend getting this mix if you need a shortcut! Super easy and delicious!!!! No one will ever know it was a pre-made mix!!!!! I’ll definitely be going out to buy some more. I may even try with a bit less of the mix, and adding some whey protein to see how it turns out!
I also like how versatile it is. You can literally add whatever you want! Nuts, fruit, chocolate chips etc. The possibilities are endless!
