Tilapia Fish Taco’s

Quick and great for during the week! I LOVE Fish Taco’s.  I first had them in Hawaii, and I’ve been hooked ever since!


Ingredients
Tilapia (fresh or from frozen)
Cumin
Chili Powder
Corn tortilla’s (small corn only tortilla’s–I buy mine at Safeway)
Mixed greens
Fresh or canned pineapple
1/2 avocado (optional)
Handful of fresh cilantro
Lime juice (or lemon)
Low fat ranch dressing
Salsa

Directions
Sprinkle the thawed tiliapia with cumin & chili powder. Spray a medium pan with cooking spray. Cook tilapia on medium to high heat for 3-4 minutes each side or until done. Remove from heat.

Avocado/pineapple salsa (chop up avocado and pineapple into bit size pieces, chop a handful of cilantro and add to the mix, top with the juice of 1/2 a lime–lemon is ok too). You can make the taco’s without this salsa if you don’t have the ingredients on hand, but its a great addition!

Heat tortilla shells in microwave or oven.

Assemble! Put a strip on ranch dressing on tortilla shell (1Tbsp), then put tilapia fillet on top (2.5 oz). Add greens, pineapple/avocado salsa, then regular salsa. Wrap up and enjoy! 2 is a serving.
