Made some grain free, high protein pancakes this morning! I had some coconut flour and almond flour sitting around and wanted to make use of it! You can purchase these kinds of flours or make them yourself. My toddler actually liked these too!
Coconut Flour – ground up unsweetened shredded coconut
Almond Flour – ground up blanched almonds
Flourless High Protein Pancakes
Makes 4 medium pancakes
2 Tbsp coconut flour
3 Tbsp almond flour
5 egg whites (I used carton kind which was 1/2 cup +2 Tbsp)
1/2 cup unsweetened vanilla almond breeze
1-2 Tbsp water
Cinnamon (to taste)
Pinch of baking powder
1 tsp vanilla
Preheat skillet on low-medium heat. Spray with cooking spray or lightly grease with whatever oil you choose. If batter is too thick, add extra water. Using a cookie spoon, I dropped 2 spoonfuls per pancake. Caution: They are more fragile than regular pancakes so you need to flip carefully.

They are filling, look at all the fiber! The texture takes a little getting used to, but I like it for something different! Top with fruit, low sugar syrup or a small amount of maple syrup, your choice!
