Fudge - BusyButHealthy

Yummy Holiday Fudge!  But with way less calories & fat than a traditional recipe.  I used less sugar.  It also happens to be vegan & gluten free!  This recipe was inspired from a great blog called Love Veggies and Yoga.  Enjoy!

Dairy-Free (Vegan & Gluten Free) Fudge

Makes 32 squares

Ingredients
2 Tbsp non-hydrogenated vegan margarine (or butter if no dairy sensitivity)
1 cup semi sweet chocolate chips (make sure no milk ingredients for vegan/dairy free)
2 cups icing sugar or confectioners sugar
1/2 cup canned coconut milk (must be regular, not low fat)
1/2 tsp vanilla
1/2 cup chopped walnuts

Directions
In a medium saucepan, mix together everything except walnuts.  Melt together over low/medium heat.  Remove from heat when it starts to bubble.  Add in chopped nut & mix.  Pour into a 8×8 pan sprayed with cooking spray.  Place in freezer until set, about 45 minutes.  Cut into 32 squares, then return to freezer or fridge to store.
