I’m just slightly obsessed with goat cheese. Its definitely on the list of one of my favorite foods! I whipped this up for a quick dinner one night, with some leftover grilled veggies I had on hand, and some store bought rotisserie chicken, which I usually have in the fridge too!
Goat Cheese, Chicken & Veggie Quesadilla (Gluten Free)
Makes 1 serving
1 x Food For Life Brown Rice Tortilla (if you don’t want gluten free, use your favorite whole wheat tortilla)
35 grams less fat goat cheese
2 oz rotisserie chicken (white meat)
1/4 cup grilled zucchini, chopped
1/4 cup grilled red pepper, chopped (or jarred roasted red peppers)
Preheat a medium skillet pan. Spread goat cheese over entire tortilla. Place veggies on one half of tortilla and fold over. Spray pan with cooking spray. Cook on one side till golden brown. Flip, then cook on other side. Cut into 3-4 wedges.
