Healthy Chocolate Chip Cookies

Growing up, one of my favorite cookies were the Chocolate Chip Cookies my Mom used to make.  Funny enough, she used the recipe from the Hershey Chipits (semi-sweet chocolate chips) bag.  To me, they are the original chocolate chip cookie.  Here is my healthier version, and truly, it tastes IDENTICAL to the original, but with almost half the fat and sugar!


Makes 20 cookies

1/4 c non-hydrogenated margerine (I used Becel Vegan)  Could also use butter.
1/4 c unsweetened applesauce
1 egg
1 tsp vanilla
1/4 c NuNatural Stevia Baking Blend (or 6 packets of stevia…Truvia, Krisda (sold in Canada) etc)
1/3 unpacked brown sugar
1 c spelt flour (could also use whole wheat flour)
1/2 tsp baking soda
pinch salt
1/2 package of Chipits Semi Sweet Chocolate Chips (175 grams)

Pre-heat oven to 375 degrees.  Cream together margerine, applesauce, stevia & brown sugar.  Beat in egg and vanilla with whisk.  Combine flour, baking soda and salt.  Gradually blend into creamed mixture. Stir in chocolate chips.  Using a measuring spoon (Tablespoon), drop dough onto cookie sheet lined with parchment paper (not wax paper).  If you don’t have parchment, you may have to spray the baking sheet with cooking spray to prevent sticking.   Bake for approx 12 minutes.  Makes 20 cookies.
