Oatmeal + Raisin Bliss Cookies

I love Oatmeal & Raisin Cookies. Probably my favorite cookie of all time. These cookies are chewy and delicious…everything that goes into the making of a great oatmeal cookie. This recipe makes 6 large cookies. Can be easily doubled to make a bigger batch.

Oatmeal + Raisin Bliss Cookies

Makes 6 big cookies

Ingredients

3/4 cup old fashioned oats
1/3 cup spelt flour (or whole wheat flour or oat flour)
1/4 cup raisins, not packed, chopped
1/4 cup sucanat or coconut palm sugar (or another raw brown sugar)
5 packets of stevia
2 Tbsp butter (for dairy-free use margarine)
2 Tbsp unsweetened applesauce
1/4 cup liquid egg whites (or 2 large egg whites)
1 tsp vanilla extract
1 tsp cinnamon
1/4 tsp baking soda
Pinch salt

Directions

Preheat oven to 350 degrees

Cream together butter, sugars, egg whites and vanilla with wooden spoon. Add applesauce. Then add the dry ingredients of flour, baking soda, cinnamon, salt. Next add oats & raisins & combine. Form 6 cookies and place on cookie sheet sprayed with cooking spray or lined with parchment paper. Bake for about 12-15 minutes or until toothpick comes out clean.
