Pumpkin Spice Protein Cookies

If you like molasses, you love this cookie.  Like a spice cookie, but with protein!

Makes 24 cookies

Dry:
1/2 c rolled oats
1 c spelt flour (or whole wheat flour)
1/2 c soy flour (or you could use 1/2 low carb, low sugar protein powder)
1 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1 Tbsp cinnamon
1 tsp nutmeg

Wet:
1/2 c canned pumpkin (not pumpkin pie filling!)
2 egg whites
2 Tbsp unsweetened applesauce
2 Tbsp water
1 1/2 Tbsp molasses
1 Tbsp vanilla
1/4 -1/3 c no calorie sweetner (stevia, splenda, erythritol, xylitol etc).  Could also use honey/agave but will change nutritionals quite a bit.

Directions
Preheat oven to 350 degrees.  In one bowl, mix dry, in another bowl mix wet.  Add wet ingredients to dry and stir with wooden spoon.  Using a Tablespoon, roll into balls (will be a bit sticky) and put on sprayed cookie sheet.  Flatten slightly.  Cook for 8-10 min.  Careful not to overcook or they will be dry.
