If you love oatmeal, this Strawberries & Cream Baked Oatmeal is a great way to have your morning bowl of oats. When you bake it, its gets nice and crispy on top, and to me, tastes so much better than a plain bowl of microwaved oatmeal! If you have time to do this once in a while, its worth it!
1/2 c old fashioned oats (important! the quick oats get too mushy)
2 Tbsp carton egg whites
1/2 c water
1/2 c almond milk (I use unsweetened vanilla Almond Breeze) or skim or 1% milk
1/2 tsp cinnamon
1-2 Tbsp sweetener of your choice (I use stevia drops)
pinch baking powder
2-3 sliced fresh strawberries
Preheat oven to 350 degrees. Mix all together then pour into oven proof bowl. Cook for 30-35 minutes!
