What’s more refreshing than fresh, cold watermelon in summer? Perhaps a delicious watermelon cocktail! Margarita’s are definitely one of my favourite summer beverages. They can be made so many different ways. I kept this one on the more traditional side to keep it simple and with only a few ingredients, but you can definitely add other things to jazz it up a little! Adding some mint would be nice, or perhaps switching up the fruit puree. I also kept it low cal. This drink is less than 140 calories, so a lot less than your typical margarita.
In today’s recipe, I’m featuring a great little kitchen appliance that I don’t think I could live without in the summertime! I was sent the Newair Portable Countertop Ice Maker SKU: NIM033SS00 to review and I’m loving it! Even though its more compact in size, it produces a lot of ice. For a family of four, its been ample for us, and helped us make it through an insane heatwave we had in Vancouver!
I received the white color, which is a clean and pure white color, and it goes perfectly in both my home kitchen, and my kitchen in the RV! I actually found a couple places it can go in the RV. Right in the kitchen near the sink, and also near our coffee bar area with the fold-out shelves.
We go to Osoyoos every summer in the trailer, and an ice machine is critical. In the long run its more inexpensive than purchasing ice, and its always at your fingertips. In the past, we’ve run into situations when the campsite store runs out of ice in the crazy heat, and that’s never a situation you’d want to be in!
For this watermelon margarita, I made it on the rocks, as that’s how I prefer my margarita’s, but it would also be amazing blended!

Here’s the recipe, I hope you enjoy this summer!
- 1 heaping cup ice
- 1 oz tequila blanco
- ½ oz triple sec
- ½ oz lime juice
- ½ oz simple syrup (I used NuNaturals Simple Stevia syrup for sugar-free)
- ½ cup watermelon puree
- First, make your watermelon puree by blending 2 cups chopped up seedless watermelon in a blender.
- In your glass, add ice, tequila, triple sec, lime juice and simple syrup.
- Top with watermelon puree.
- Stir, and garnish with a slice of watermelon.
- Optional alternatives: pineapple, watermelon & mint, peach.
