Banana Chocolate Chip Gluten Free Pancakes

Big thanks to Tony at Fit Marriage for inspiring this recipe.  Here is their yummy version.  Mine turned out fabulous!  I swapped things around a bit for what I had on hand and made less batter since it was just for Sienna and I. I ate two and still had extra’s!

Banana Chocolate Chip, Higher Protein, Gluten Free Pancakes

Makes 6 medium pancakes

1 cup Bob’s Red Mill Gluten Free Pancake Mix (or any gluten free pancake mix)
1 medium ripe banana, mashed
4 egg whites (1/2 cup liquid egg whites)
1/4 cup water
1 x 30 gram scoop (or 1/4 cup) vanilla whey protein powder
2 Tbsp semi-sweet chocolate chips

In a medium sized bowl, add pancake mix and protein powder.  In a small bowl, mash banana, then add egg whites and water.  Mix.  Add the banana and egg white mixture to the pancake mix and protein powder.  Then add chocolate chips.  Spray or lightly oil a skillet on LOW heat.  Using an ice cream scoop, portion out pancakes.  Will make 6 medium sized pancakes.

I put peanut butter and low sugar syrup on mine….Mmmmm.
