Easy Coconut Shrimp with Magic Chef Digital XL Air Fryer

Crispy shrimp perfection. Coconut shrimp is amazing, and I never thought I could make restaurant quality coconut shrimp at home without frying. But thanks to air-frying, its totally doable, and it comes out just as good (if not better!) than what you get at a restaurant.

What I love about this recipe is its totally fool-proof! I’ve tested it a few times and it always comes out perfect. I’ve also had friends test it out and they were blown away that it was not fried it oil. I’m so excited to tell you about this air fryer that I’m loving and I’m having so much success in making air-fried foods at home! This is the first time I’ve used an air fryer that contains the basket and no rotating arm, and I have to say, its definitely a lot more versatile and can do a lot more than my previous air fryer.

The one I’ve been using is Magic Chef Digital XL air fryer, and I was given a unit to test out. I’m all about giving an honest opinion and if I didn’t like it, I would tell you, but that’s definitely not the case here!  I’ve had the chance to try it out with quite a few recipes and everything has come out GREAT. These coconut shrimp are one of my favorites, but I also loved the zucchini sticks, popcorn chicken, falafel and fish that I’ve made have all turned out amazing. If you’ve been on the fence about getting an air fryer, I highly recommend it. I’m also planning on posting a lot more recipes and quick ideas with what you can make using it.

All you do is place your food in the basket, spray with a touch of oil, then push it in and set the timer! These coconut shrimp cooked in only 8 minutes! Since its a larger basket, a lot of food can fit in there too. So for a family, or to feed a crowd, its a great option and you shouldn’t have to do more than 1 or 2 batches. For this coconut shrimp recipe, I was able to do it all in 1 batch!

The Magic Chef Digital XL air fryer is also super easy to clean. The basket pops out easily and you can wash the base and basket very quickly. I still just couldn’t believe how beautiful the shrimp came out in only 8 minutes!

Upon calculating the nutrition in this recipe, I realized its gluten-free, dairy-free as well as keto-friendly. 1 serving is around 5.5 g of carbs. Can’t go wrong with that. Including prep, these were done in less than 20 minutes.

Aside from that, the food comes out amazing and I can’t believe how quickly its done! You don’t have to warm it up at all either, you just put your food in, set the temp and timer (or use one of the pre-determined settings) and then it cooks in no time!

Easy Coconut Shrimp with Magic Chef Digital XL Air Fryer

Easy air fried coconut shrimp that comes out so crispy but not fried in oil.

Ingredients
  • 21 shrimp 31-40 per pound size, thawed, tail left on
  • ¼ cup cornstarch
  • ½ cup egg white
  • 1 cup unsweetened shredded coconut
For the dip (optional)
  • sweet chili sauce or sweet chili sauce mixed with light mayo
Instructions
  1. Prepare 3 small bowls. 1 for the cornstarch, 1 for the egg white and 1 for the coconut.
  2. Holding the shrimp by the tail, first dip in the cornstarch. Shake off the excess.
  3. Next, dip in the egg white.
  4. Then place into the coconut.
  5. Place the shrimp in the air fryer, and repeat the process with all the shrimp.
  6. Spray the coconut shrimp with a mist of cooking spray.
  7. Close the air fryer and set the temp to 330 degrees for 8 minutes.
  8. If you're using the Magic Chef Digital air fryer, use the shrimp setting.
