Operation: Lean Out, Food Fakeouts!

Happy Friday!  I’ve got lots of great gossip and food for you this week!  I’m even going to be brave enough to share my measurements! Eeek!

First things first, lets go over a bit of the food I ate this week, cause lets face it, I love food!

This week was filled with a lot of FAKE OUTS!!  Who doesn’t love a great fake out?

Eggplant Parmesan

Ok, this is soooo super easy and is a great & quick fakeout!  First, preheat your oven to broil on HIGH.  Then I just sautee some eggplant and onion.  At the end, toss in some pre-cooked chicken breast.  Then toss in 1/2 cup jarred low sodium pasta sauce.  Remove from heat.  Now here is another option…add some tofu shirataki or yam noodles!  Rinse those, pat dry with paper towels and add to the bottom of an oven-proof dish.  Then place the eggplant/chicken/sauce mixture on top.  Sprinkle with fresh parmesan (or I used the soy version).  Broil for 10 minutes or until browned and bubbly.  Its that easy!!!!

Healthy Eggo Waffles

If you follow the Facebook Recipe Club, you may have seen the recipe for the waffles.  These are sooooo good!  I’ve been having these for years!  Had lost the recipe, but found it again the other day!  These have an awesome texture!  Crispy on the outside.  You make them ahead, freeze, then pop in the toaster, just like Eggo’s!!! —>GET THE RECIPE

Here’s how I had some: Toasted, topped with 1 Tbsp coconut butter (HEAVEN!) and cooked mixed berries (microwaved in a small bowl with 1 packet stevia).

fish tacos.JPGAnother super quick and easy meal.  Tilapia only takes a few minutes per side to cook in a fry pan.  I just sprinkled the fish with chili powder and cumin. Then I used corn only tortilla’s and topped them with what I had in the fridge! (cabbage mix, pineapple, salsa & a bit of dairy-free sesame type dressing).  I posted a similar version a while back –>GET THE RECIPE

Other Food

Of course I got in my veggies for the week via:

Stir Fry (with some yam noodles). Those are clear, unlike the tofu shirataki noodles.

Plus, some Roasted Cauliflower and Brussel Sprouts.  I used to hate brussels, but they have been growing on me!  I much prefer them roasted over steamed.

Operation: Lean Out

So if your wondering what “Operation: Lean Out” is….its my mission to lean out a little for a few events coming up in the spring! Goal date being the end of March.  Just in time for the FAME West Fitness & Bodybuilding Show on March 26th where I’ll be helping out backstage!  I’m not talking anything major.  5-7 pounds (and some inches).  I’ve really just been in maintenance mode for the last year, and tried to put on a bit more muscle.  Not much cardio, no overtraining.  My weight has stayed the same, and measurements too.  p.s.  I’m 5’6

Current Stats
Weight 131.2 pounds
Waist: 27 inches
Abs: 31.5 inches
Upper Hip: 34.8 inches
Lower Hip: 37.5 inches
Thigh: 22.5 inches
Arm (bicep): 10.2 inches

Goal Stats
Weight: 125 pounds
Waist: 26.5 inches
Abs: 29 inches
Upper Hip: 33.5 inches
Lower Hip: 35.5 inches
Thigh: 21 inches
Arm: 10 inches (or larger!)

So that’s just over 5 lbs fat loss and 8 inches overall.  I take measurements very regularly, so this is a realistic goal and similar to what I was a while back.  Tightening up the diet a bit and doing a bit of cardio should take care of that!  I’m aiming to look ‘leaner’, not skinny!  I know my body, I have muscle, so cutting down a bit will show more of the definition.  I also like the low and slow approach, as it won’t mean huge changes in my food or workout program.  I’m going back to the “no treats during the week” method and have a few treats and cheat meal 1 day on the weekend!  Will also be measuring my food more consistently (protein especially).

Weekend plans?  I’m making a mega batch of lean cabbage rolls.  Like I’m talking enough to feed an army, and freeze a ton.  Also some muffins for my girlfriend with the new baby girl!  Super Bowl on Sunday, hubby will be watching!  He’s requesting some of the Super Bowl Recipes from yesterday’s post!
